Summer is pretty much here, and for a lot of people that means it’s burger time! Who doesn’t love a good juicy burger (especially if you get to eat it outside)? Unfortunately, the average burger can be loaded with excess carbohydrates and calories. However, there are ways that you create a yummy burger that cut out the unhealthy bits yet remains as tasty as ever.
This healthy burger recipe substitutes roasted cabbage for burger buns. And while that may sound a bit different, we promise that, so long as you follow the recipe, you’ll have a delicious treat that will also keep you from feeling guilty. (Grilling the cabbage with the right amount of oil and seasoning removes any bitterness and even enhances the meat flavors.)

Roasted Cabbage Burgers

INGREDIENTS
- 1 small head of green cabbage (about 10 ounces)
- 3 tablespoons neutral oil
- 2 1/2 teaspoons kosher salt, divided
- Freshly ground black pepper
- 1 pound (80% lean) ground beef
- 4 slices American cheese
- Ketchup, mustard, cooked crumbled bacon, dill pickle chips, and finely chopped red onions, for serving
INSTRUCTIONS
- Arrange a rack in the center of your oven and preheat the oven to 425°F.
- On a cutting board, arrange the cabbage on its side. Using a sharp knife, cut 1 inch off the top of cabbage (put it aside to use later). Cut the remaining cabbage into 4 (1/2-inch-thick) steaks; discard root end.
- Arrange cabbage steaks on a baking sheet. Brush both sides of steaks with oil; season all over with 1 1/2 teaspoons kosher salt and a few grinds of pepper.
- Roast cabbage until tender (20-25 minutes)
- About 5 minutes before cabbage is finished cooking, form ground beef into 4 large flat patties about 4 inches in diameter; season all over with remaining 1 teaspoon of salt and a few grinds of pepper. Arrange one patty on top of each roasted cabbage steak.
- Continue to bake until cabbage is tender and burgers are cooked to desired degree of doneness (about 8 minutes for medium-rare).
- Top each patty with a slice of cheese. Continue to bake just to melt cheese (about 1 minute).
- Serve topped with ketchup, mustard, bacon, pickles, and onion, as desired.
